Hello I guess you'll have to trouble shoot all 3 water pump switches, 1 at the sink, 1 in the bathroom and one at the macerator pump controls. I would probably start with the one at the macerator pump controls as its exposed to moisture/humidity. If your sure they are all off that is. The wiring is pretty simple I would say that its a switch issue as you are not saying the pump is still running. The Mpx low side latching controller I wouldn't think is the issue if you can still start and stop the pump with the switches. Here is a link to the latching controller https://intellitec.com/wp-content/uploads/2019/05/53-00145-100.pdf .  This has a wiring diagram that shows how it works. The switches control the ground side of the circuit. On my 2552 the Mpx low side latching controller is located under the passenger side bed. The latching controller is at the bottom of the picture.

I would think you could simply disconnect the wires from each switch one at a time and see when the light goes out, That will probably be the faulty switch.

Very Respectfully
Lance

Wow didn't figure it to me the MPX latching relay. I am however happy you figured out the issue. Look forward to seeing you out on the road. Very Respectfully Lance
