Although we again downsized last October to a 2350 I can say we were very happy with the 3100, found it roomy, great layout, drove fine without any modifications, and was reliable. As the years flew by and my age progressed I decided I no longer wanted to tow anything , wanted to keep rving, and be as small as practical; hence the move to a 2350. This spring we will see how that works out.

As you know we have owned our 2350 for a long time. Some PC owners on this forum started out with a 2350 and soon thereafter switched to a 2551, primarily for improved bed access, but also for a roomier bathroom. Hopefully that won't be you in a year or two.
Our experience with the rear corner bed is that it helps immensely to keep the "fluff" down. Don't use fancy fluffy comforters as we did the earlier years to get yourself swallowed up and tangled in. Use blankets instead. Our mattress is due for replacement and so we are in process of trying something different, a much more dense foam which we feel will help not only with our rest, but also help getting into and out from the bed.
One more thought about the 2350 bed access. We mounted a TV with an integrated DVD player on the shirt closet which doesn't help with access at all. But the TV is very important to us and so we accept it. If we never wanted a TV there, I would consider modifying the shirt closet 2 to 3 inches more shallow to open up the bedroom further. I feel that would help a lot for Irene getting in and out when I am already in bed because she sleeps against the right side wall.
Some people use sacks for sleeping, they claim also helps.
As far as towing is concerned. We tried one lengthy trip leaving our tow vehicle home. We learned our PC was easy to maneuver around in for daily excursions all by itself. But even still, we wished we had brought our tow vehicle. We quickly learned that every morning was "moving day" requiring us to put everything in it's proper place which got old. A different issue was where we traveled. One park of many visited that trip was Glacier NP. There "moving day" went away, but we were totally dependent on shuttle buses because our 23'-8" PC was too long to drive the primary road through the park. We lost our independence and flexibility. So we learned on that trip to always tow our Jeep Liberty.
Back when our PC was nearly new, I had a bunch of suspension upgrades done to our 2350 which made a world of difference, especially because we tow. The E350 chassis since 2007, it's suspension was improved right from Ford so maybe you will be fine.
