I am very interested in buying a used 2350 on the Ford chassis. Unfortunately, there are none for sale in the Northeast to try on for size
Is the 2350 comfortable to drive, to walk thru and to sleep in the corner bed, since I am 6 feet tall?

6'1" 235# here with a 2006 2350.
Very comfortable driving, I prefer the seatback 'straight up' for my back, YMMV.
Rear bed, my wife (5') sleeps on the bath side, I sleep on the window side. She has learned to 'scrunch up' a little to let me in and out. Not as roomy as our King at home, but for a small camper it is perfectly fine. We are NOT full timers, just use the camper for shorter trips.

I am 5'-11" tall when bare foot, taller with my hiking shoes on. I weigh 180 lbs.
Regarding driving our 2007 PC2350 on an E350. The E-series, "Ford's" interior design is somewhat restricted to begin with, so you could sit in an E150 van to see how that feels. All PCs allow full travel of the driver seat base. In our case without a slide out, the dinette is set closer to the driver seat. Reclining is limited but is adequate for comfortable driving. PCs with a slide out behind the driver seat, offers more reclining because the slide out is set further rearward (roughly one foot) to clear the angled transition wall.
Here is our dinette and driver seat in it's near max-allowed reclining position. The seat is rearward as much as the power seat base allows. It is more than I require for comfortable driving. Actually I never set the seat base all the way back because my feet would not comfortably reach the pedals. This allows for extra reclining that I never utilize.

Regarding sleeping in our 2350 rear corner double bed. I sleep on the bathroom wall side. With my head to the head board, my feet do not over-hang, but I intentionally lay so that my feet do over-hang. I could sleep against the outside wall, but it would be tight for me. My wife Irene is 5'-2" and 120 lbs. Sleeping together is a snug fit but we don't mind. If she has to get up, we learned it is better if I get out to let her out. We do have a small TV mounted against the shirt closet which contributes for the need to do so. If this was a serious enough of a problem, I would remove the shirt closet. If we had model 2351 with the optional longer double bed, I think she could get out without disturbing me.
The shower is tight but works for me.
I have been blessed with hair on the top of my head. It is a bit poofy as seen in my profile pic on the side here. When I walk around with my shoes on, my hair barely touches low hanging items like light fixtures and a/c unit.

I can't help with the sleeping part but the driving part I can. I'm 6'6" @ 275# and hove no issues driving our 2552 on the E450 frame (I believe the driver's area to be very close to the E350). If you'd like to go up a couple sizes our rig is for sale in southwest Michigan. It's listed in the for sale section.

I am 5'10" and actually have to move the seat forward for me to sit comfortable. So it works for me. I had a pusher that was sooooooooooo uncomfortable driving. My 2350 is actually very nice and easy to drive. As far as sleeping in a corner bed. Ain't done it yet. I am a flopper so will probably sleep on the electric couch/bed.

I was so disappointed with the comfort of the couch we didnt make it one night sleeping. When (IF at this rate... I can hear Mrs V thinking... roflol ) I get the bathroom done, plans are to scrap it and put a dinette into the slide. I would advise a thick mattress topper if you are gonna use the couch if its as comfortable as the one in my 2006.

The old style jack knife sofa in the 2006 was unofficially declared the worst sofa to sleep on. A few years latter, it was replaced with the air bed which was a sofa that opened into a bed, utilizing a blow-up air mattress. It started out with rave reviews, but later declared a bust. Then came the split reclining sofa. It has continued via a few variations over the years.
A standard dinette will not fit inside your slide out. I have seen one dinette bench and the table fit in there, so unless you are exceptionally short, you won't be able to sleep on it. I advise to consider a reclining couch that converts into a large queen size bed. It has survived as the converting couch of choice for many years now.
For reference, CLICK HERE (https://www.flickr.com/photos/37432012@N08/albums/72157682846402944) to review our 2350 dinette that has no slide out. The dinette is much bigger by utilizing a lot more linear wall space than is available with the 2006 model year 2350 slide out.
You have me wondering if your plan is to do what is considered "unthinkable" in the RV industry.......remove your slide out. If you did that and documented it well, that would be one hot website. The outside wall of your slide out "is" the original outside wall, cut out and used to make the slide out box. Reuse it, frame it beautifully, and you can then fit a decent size dinette in the space you made.
I am 5'-11" tall. When our dinette is converted into a bed and I lay on my back and stretch to max length, I can feel the structure on my head and my feet. I have slept on it only a few times when I got sick during a trip. I found the dinette extremely comfortable with the dark green vinyl covered dense foam cushions we've had for some time now. The original cloth cushions pictured in the link I provided were a bust for a number of reasons.

I would be putting a dinette in there. I would NOT be interested in sleeping on/in it at all. I have a bed for that. 2o2
Storage, good laptop work area... I have seriously thought of doing a nice seat for two, with plenty of room. Maybe windows in the sides to see front and back when the slide is out. Its on the long list. >:(

Im 6' 2" and not petite. I did check very carefully that one bed in my 2151 is long enough to be comfortable for me. The right bed is 74" or so so it's long enough. To give you an idea, I can actually have my toes on my yuge feet almost touch the bottom of the wardrobe cabinet.
On the other hand I knew from seeing a BT Cruiser that the "walkaround" queen beds are not walk-around-able. That's why we learned we needed the twin beds on the 2151 when we toured the PC factory.
